At Saporito, I am committed to using the freshest ingredients. I always source from the local farms, Milkhouse, Ely, the vendors at the Wrightstown Market because the best ingredients make the best food. Here, I’ve grown my own zuchinni flowers to make fratelli, which are a family favorite!


While pasta is our main product at Saporito, I can’t help but make some extra special sauces from the bountiful ingredients of the summer season! Here, you can see the beautiful green basil of the pesto that, when added to a fresh linguini, is unmatched in flavor and comfort!
In Francesca’s beautiful kitchen in Artena, Alessandro and I shaped ox cheek tortelloni by hand, sealing each one before it joined the pot for Sunday dinner. In the background, Lucia worked steadily on the rest of the meal as the kitchen filled with conversation and anticipation. Later, we gathered to enjoy what we had all helped prepare — a reminder that the best meals are the ones made together.


In addition to the ox cheek tortelloni, we prepared a beautiful dish of mortadella tortellini — smaller, delicate, hand-folded parcels. Time-consuming, yes, but worth every minute. A bowl of these little gems awakens the senses: the gentle aroma of nutmeg and pork rising with the steam, the silky tenderness of fresh pasta, the rich filling unfolding in each bite. It’s comfort in the first bite, and the kind of quiet pleasure that makes you close your eyes just for a moment.
Yet, while all of the hand stuffed and formed pastas are special, there’s nothing quite like a bite of fresh cut fettuccini or as Anthony Bourdain called the “working-class” pasta. It’s complex in its simplicity. It fills the stomach and the heart. Pictured here, I elevated the “working-class” pasta with a fresh summer bolognese. The dish couldn’t have been more magical!
